  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Food coloring (gel preferred)
  • Salt and pepper to taste

Instructions

  1. Place the eggs in a pot, cover with cold water, and bring to a boil over medium heat. Cover the pot and turn off the heat; let sit for 10-12 minutes.
  2. Transfer the eggs to an ice bath for 5-10 minutes until completely cooled. Peel gently.
  3. Slice each egg in half lengthwise and scoop out the yolks into a bowl.
  4. Prepare food coloring by mixing gel colors with water in separate bowls. Dip each egg white half for 5-10 minutes until desired shade is achieved.
  5. Mash the yolks with mayonnaise, Dijon mustard, vinegar, salt, and pepper until smooth. Adjust seasoning as needed.
  6. Fill each colored egg white with the yolk mixture using a spoon or piping bag.
  7. Garnish with paprika or fresh herbs before serving.
