  • 3 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 1 lb potato gnocchi
  • 2 cups fresh spinach or kale

Instructions

  1. Place chicken breasts at the bottom of the crockpot; season with salt and pepper.
  2. Add diced onion, carrots, celery, and garlic over the chicken.
  3. Pour in chicken broth until all ingredients are submerged.
  4. Cut cream cheese into cubes and scatter on top.
  5. Sprinkle thyme over the mixture and cover with lid.
  6. Cook on low for 6-8 hours or high for 4-6 hours.
  7. Add gnocchi during the last 30 minutes of cooking.
  8. Stir in spinach or kale just before serving.
