  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 28 oz canned diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 8 oz cream cheese
  • 9 oz cheese tortellini
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Sauté onion and garlic in olive oil over medium heat until translucent.
  2. Transfer sautéed mixture to the crockpot; add diced tomatoes, vegetable broth, cream cheese, oregano, basil, salt, and pepper. Stir until combined.
  3. Cook on low for 4 hours or high for 2 hours.
  4. Add tortellini during the last 30 minutes of cooking.
  5. Stir in spinach five minutes before serving until wilted.
  6. Serve hot with grated Parmesan if desired.
