  • 2 lbs Yukon Gold or Russet potatoes (peeled and diced)
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tsp dried thyme
  • 4 slices bacon (optional, cooked and crumbled)

Instructions

  1. Wash and peel the potatoes; dice them into bite-sized pieces. Finely chop the onion and mince the garlic.
  2. Optionally, sauté onions and garlic in a skillet with oil until fragrant and translucent (3-5 minutes).
  3. In the crockpot, combine diced potatoes, sautéed onions, minced garlic, vegetable broth, salt, pepper, and thyme. Stir to mix well.
  4. Cover and cook on low for 6-8 hours or high for 4 hours until potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth. Stir in heavy cream just before serving.
  6. Serve hot, garnished with crispy bacon bits or green onions if desired.
