Instructions
- Peel and cut Yukon Gold potatoes into equal-sized chunks. Rinse under cold water.
- Place potato chunks in a pot with cold water and a pinch of salt. Bring to a boil over medium-high heat and simmer until fork-tender (about 15-20 minutes).
- Wrap whole garlic cloves in foil with olive oil and roast at 400°F (200°C) for 20 minutes.
