  • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
  • 1 head of garlic
  • ½ cup heavy cream
  • 4 tbsp unsalted butter
  • Salt and pepper, to taste

Instructions

  1. Peel and cut Yukon Gold potatoes into equal-sized chunks. Rinse under cold water.
  2. Place potato chunks in a pot with cold water and a pinch of salt. Bring to a boil over medium-high heat and simmer until fork-tender (about 15-20 minutes).
  3. Wrap whole garlic cloves in foil with olive oil and roast at 400°F (200°C) for 20 minutes.
  4. Drain the cooked potatoes and return them to the pot over low heat to evaporate moisture. Mash until smooth.
  5. Add roasted garlic, heavy cream, and butter to the mashed potatoes. Season with salt and pepper to taste.
  6. Spoon into bowls or plates while warm. Garnish with fresh herbs if desired.
