  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 can (14 oz) marinated artichoke hearts, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Season chicken breasts with salt and pepper. Place in the greased baking dish.
  3. In a skillet over medium heat, sauté spinach in olive oil until wilted. Add artichokes and heat through.
  4. In a bowl, mix cream cheese, garlic powder, lemon juice, mozzarella, and half of the Parmesan until smooth.
  5. Fold the spinach mixture into the cream cheese blend and spoon over the chicken.
  6. Bake uncovered for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and top is golden brown.
  7. In the last five minutes of baking, sprinkle remaining Parmesan on top.
