- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper (adjust to taste)
- 1/2 cup sweet chili sauce
- 1 tablespoon sriracha sauce (optional)
- 1/2 cup mayonnaise
- Juice of 1 lime
- Green onions for garnish
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, garlic powder, and cayenne pepper. In another bowl, whisk eggs until frothy. Place panko breadcrumbs in a third bowl.
- Dip each chicken piece in the flour mixture, then egg wash, and finally coat with panko breadcrumbs.
- Arrange on the baking sheet without overcrowding and lightly spray with cooking oil.
- Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
- For the sauce, combine mayonnaise, sweet chili sauce, and lime juice until smooth; add sriracha if desired.
- Toss baked chicken in the sauce or serve it on the side. Garnish with chopped green onions.
