  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1/2 cup sweet chili sauce
  • 1 tablespoon sriracha sauce (optional)
  • 1/2 cup mayonnaise
  • Juice of 1 lime
  • Green onions for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, garlic powder, and cayenne pepper. In another bowl, whisk eggs until frothy. Place panko breadcrumbs in a third bowl.
  3. Dip each chicken piece in the flour mixture, then egg wash, and finally coat with panko breadcrumbs.
  4. Arrange on the baking sheet without overcrowding and lightly spray with cooking oil.
  5. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
  6. For the sauce, combine mayonnaise, sweet chili sauce, and lime juice until smooth; add sriracha if desired.
  7. Toss baked chicken in the sauce or serve it on the side. Garnish with chopped green onions.
