Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut salmon into bite-sized pieces.
- In one bowl, whisk eggs; in another, combine panko breadcrumbs and cornstarch.
- Dip each salmon piece in the egg mixture, then coat with breadcrumb mixture.
- Arrange coated salmon on the baking sheet and bake for 12–15 minutes until golden brown.
- While baking, mix mayonnaise and sriracha for dipping sauce.
- Serve warm, garnished with chopped green onions and a drizzle of lemon juice.
