Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the ripe bananas in a bowl until smooth but slightly chunky.
- In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add mashed bananas, egg, and vanilla; mix until combined.
- Gradually add flour, baking soda, cinnamon, and salt to the wet mixture. Stir gently until just combined; avoid overmixing.
- If desired, fold in nuts. Scoop dough onto the prepared baking sheet about two inches apart.
- Bake for 10-12 minutes or until golden brown. Let cool slightly before enjoying plain or drizzling with frosting.
