Crumbl Banana Bread Cookies are a delightful twist on classic banana bread, combining soft, chewy textures with sweet, rich flavors. Topped with a glaze, they’re irresistible and perfect for sharing.

Ingredients

Scale
  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • chopped pecans or walnuts (optional)
  • frosting (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a bowl until smooth but slightly chunky.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add mashed bananas, egg, and vanilla; mix until combined.
  4. Gradually add flour, baking soda, cinnamon, and salt to the wet mixture. Stir gently until just combined; avoid overmixing.
  5. If desired, fold in nuts. Scoop dough onto the prepared baking sheet about two inches apart.
  6. Bake for 10-12 minutes or until golden brown. Let cool slightly before enjoying plain or drizzling with frosting.
