  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 8 oz dark chocolate, melted
  • 1 can (15 oz) tart cherries, drained

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix cookie crumbs and melted butter. Press into the bottom of a springform pan as the crust.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar; mix until fluffy. Add sour cream and vanilla extract; blend well.
  3. Fold in melted dark chocolate gently to maintain swirls.
  4. Fold in half of the cherries into the mixture.
  5. Pour filling over crust and spread evenly. Bake for 50–60 minutes until set but slightly jiggly in the center. Turn off oven and cool inside for an hour.
  6. Refrigerate for at least four hours. Top with remaining cherries before serving.
