Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In another bowl, cream softened butter with brown and granulated sugars until fluffy. Add eggs and vanilla; mix well.
- Gradually incorporate dry ingredients into the wet mixture until just combined. Fold in chocolate chips.
- To make the cheesecake filling, beat softened cream cheese with powdered sugar (and lemon juice if using) until smooth.
- Scoop cookie dough onto the prepared sheet, flatten slightly, add a teaspoon of cheesecake filling, and cover with more dough.
