Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream softened butter with brown and granulated sugars until fluffy. Add eggs and vanilla; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined. Fold in chocolate chips.
  5. To make the cheesecake filling, beat softened cream cheese with powdered sugar (and lemon juice if using) until smooth.
  6. Scoop cookie dough onto the prepared sheet, flatten slightly, add a teaspoon of cheesecake filling, and cover with more dough.
  7. Bake for 10-12 minutes until edges are golden but centers remain soft.
