Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and baking soda until combined.
- In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla until smooth. Pour into dry ingredients and gently mix until just combined.
- Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
- Once cooled, poke holes all over each layer with a wooden spoon handle.
- For frosting, heat evaporated milk, sugar, egg yolks, butter, and vanilla over medium heat until thickened. Stir in toasted pecans and coconut flakes.
- Pour half of the warm frosting over the first cake layer; repeat with the second layer. Spread remaining frosting on top.
