Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round baking pans and line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and baking soda until combined.
  3. In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla until smooth. Pour into dry ingredients and gently mix until just combined.
  4. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  5. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  6. Once cooled, poke holes all over each layer with a wooden spoon handle.
  7. For frosting, heat evaporated milk, sugar, egg yolks, butter, and vanilla over medium heat until thickened. Stir in toasted pecans and coconut flakes.
  8. Pour half of the warm frosting over the first cake layer; repeat with the second layer. Spread remaining frosting on top.
