  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (or other vegetables)
  • ½ cup cooked bacon or ham, diced
  • 1 package (14 oz) refrigerated pie crusts
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the pie crusts on a floured surface and cut circles slightly larger than muffin tin holes.
  3. If using onions or peppers, sauté in olive oil until softened.
  4. In a bowl, whisk together eggs and milk until frothy; mix in cheese, bacon or ham, sautéed veggies, salt, and pepper.
  5. Spoon the egg mixture into each crust until just full.
  6. Bake for 20-25 minutes until golden brown on top.
