Ingredients
- Lasagna noodles (no-boil or regular)
- Fresh cremini or button mushrooms
- Baby spinach
- Ricotta cheese
- Shredded mozzarella cheese

- Marinara sauce

Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms until golden brown. Add spinach until wilted.
- In a mixing bowl, combine ricotta cheese with half of the Parmesan, salt, and pepper.
- Begin layering: spread marinara sauce in a baking dish, add noodles, half the sautéed vegetables, half the ricotta mix, repeat layers, finishing with sauce and mozzarella on top.
- Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
