Description

Mushroom and Spinach Lasagna is a delightful vegetarian dish that seamlessly blends layers of tender lasagna noodles with sautéed mushrooms and vibrant spinach, all enveloped in a creamy mixture of ricotta and mozzarella cheeses.


Ingredients

  • Lasagna noodles (no-boil or regular)
  • Fresh cremini or button mushrooms
  • Baby spinach
  • Ricotta cheese
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Garlic
  • Olive oil
  • Marinara sauce
  • Salt and pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms until golden brown. Add spinach until wilted.
  3. In a mixing bowl, combine ricotta cheese with half of the Parmesan, salt, and pepper.
  4. Begin layering: spread marinara sauce in a baking dish, add noodles, half the sautéed vegetables, half the ricotta mix, repeat layers, finishing with sauce and mozzarella on top.
  5. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
