Instructions

  1. Heat olive oil in a skillet over medium heat. Add washed spinach and sauté until wilted (about 2 minutes).
  2. In a bowl, combine the wilted spinach with crumbled feta and shredded cheese; mix well.
  3. Place one tortilla in the skillet, spoon half the filling onto one side, and fold the tortilla over.
  4. Cook for about 3 minutes on each side until golden brown. Repeat with remaining tortillas.
  5. Slice into wedges and serve immediately with salsa or guacamole.
