Description

Chicken Salad Chick Broccoli Salad is a creamy, crunchy delight that combines tender chicken with fresh broccoli, tossed in a tangy dressing. Perfect for picnics or gatherings!


Ingredients

  • 34 boneless skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup finely chopped red onion
  • 1/2 cup diced celery stalks
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper, then bake in a greased dish for 25-30 minutes until cooked through.
  2. Blanch broccoli florets in boiling water for about 2 minutes, then drain and cool under cold water.
  3. Chop cooled broccoli, diced red onion, and celery into small pieces.
  4. In a large bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  5. Cube the baked chicken and combine with the dressing and chopped veggies. Toss gently to coat evenly.
  6. Cover and refrigerate for at least 30 minutes before serving to enhance flavors.
