- 3–4 boneless skinless chicken breasts
- 2 cups fresh broccoli florets
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1/4 cup finely chopped red onion
- 1/2 cup diced celery stalks
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper, then bake in a greased dish for 25-30 minutes until cooked through.
- Blanch broccoli florets in boiling water for about 2 minutes, then drain and cool under cold water.
- Chop cooled broccoli, diced red onion, and celery into small pieces.
- In a large bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Cube the baked chicken and combine with the dressing and chopped veggies. Toss gently to coat evenly.
- Cover and refrigerate for at least 30 minutes before serving to enhance flavors.
