Instructions

- In a saucepan, combine granulated sugar, light corn syrup, and half a cup of water. Heat over medium until boiling, stirring continuously.
- Remove from heat when the mixture reaches 240°F (115°C) and stir in the bloomed gelatin until fully dissolved.
- Add cotton candy flavoring oil and pink food coloring; mix well.
- Pour the mixture into a stand mixer bowl and whip on high speed for about 10 minutes until light and fluffy.
- Transfer to a powdered sugar-coated baking pan, smooth the top, then let set at room temperature for at least 4 hours or overnight before cutting into squares.
