Ingredients

  • Unflavored gelatin powder
  • Water
  • Pink food coloring
  • Cotton candy flavoring oil
  • Powdered sugar

Instructions

  1. Bloom the gelatin by mixing it with cold water in a small bowl; let it sit for 5 minutes.
  2. In a saucepan, combine granulated sugar, light corn syrup, and half a cup of water. Heat over medium until boiling, stirring continuously.
  3. Remove from heat when the mixture reaches 240°F (115°C) and stir in the bloomed gelatin until fully dissolved.
  4. Add cotton candy flavoring oil and pink food coloring; mix well.
  5. Pour the mixture into a stand mixer bowl and whip on high speed for about 10 minutes until light and fluffy.
  6. Transfer to a powdered sugar-coated baking pan, smooth the top, then let set at room temperature for at least 4 hours or overnight before cutting into squares.
