Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup mixed citrus fruits (oranges and grapefruits), segmented
  • ½ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water. In a skillet over medium heat, add olive oil and sauté shrimp for 3-5 minutes until pink and opaque. Remove from heat and let cool.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  3. In a large bowl, combine cooked shrimp, diced avocados, segmented citrus fruits, red onion slices, and chopped cilantro. Drizzle with dressing.
  4. Gently toss ingredients to coat without mashing the avocados. Serve immediately.
