  • 2 ripe peaches, chopped
  • 1 cup full-fat coconut milk
  • 3 tbsp pure maple syrup
  • 1 tbsp fresh lemon juice

Instructions

  1. Wash and chop the peaches into small pieces.
  2. In a blender, combine the chopped peaches, coconut milk, maple syrup, lemon juice, and vanilla extract. Blend until smooth.
  3. Pour the mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert sticks into each mold and freeze for 4-6 hours until solid.
  5. To unmold, run warm water over the outside of the molds and gently pull out the popsicles.
