  • 6 flour tortillas
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (cheddar & Monterey Jack)
  • Sour cream for serving

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a skillet, brown the ground beef over medium heat for 7-10 minutes. Drain excess fat.
  3. Pour half of the enchilada sauce over the cooked beef and simmer for 3-4 minutes.
  4. Spoon the meat mixture into each tortilla, sprinkle with cheese, and roll tightly.
  5. Place seam-side down in the baking dish. Pour remaining sauce over enchiladas and top with more cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown.
  7. Serve hot with a dollop of sour cream.
