  • 2 cups fresh strawberries, hulled and quartered
  • 1 large cucumber, thinly sliced (English preferred)
  • 1/4 small red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Wash the strawberries and cucumber; hull the strawberries and slice them into quarters. Cut the cucumber into thin rounds.
  2. Thinly slice the red onion and chop the mint leaves.
  3. In a large bowl, combine strawberries, cucumbers, red onion, and mint.
  4. In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper.
  5. Pour the dressing over the salad mixture and toss gently. Allow it to sit for five minutes before serving.
