  • 1 cup freshly grated Parmesan cheese
  • 1 cup homemade croutons
  • 2 tablespoons anchovy paste
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and dry romaine lettuce; chop into bite-sized pieces.
  2. Preheat oven to 375°F (190°C). Cube day-old bread, toss with olive oil, salt, and pepper. Bake until golden (10-15 minutes).
  3. In a bowl, whisk together minced garlic, anchovy paste, Dijon mustard, lemon juice, olive oil, salt, and pepper until creamy.
  4. Combine chopped romaine with croutons in a large mixing bowl; drizzle dressing over the top and toss gently.
