- 3 tbsp unflavored gelatin powder
- 1/2 cup water (for blooming gelatin)

- Powdered sugar (for dusting)
Instructions
- In a small bowl, combine gelatin powder with 1/2 cup water and let bloom for 5 minutes.
- In a saucepan over medium heat, mix granulated sugar, corn syrup, and 1/2 cup water. Stir until dissolved; then boil without stirring until it reaches 240°F (115°C).
- Remove from heat and stir in cotton candy flavoring and food coloring if desired.
- Transfer the mixture to a mixing bowl. Beat on high for about 10 minutes until fluffy and tripled in size.
- Pour into a greased pan dusted with powdered sugar. Spread evenly and let set for at least 4 hours or overnight.
- Dust with more powdered sugar before cutting into squares.
