Creamy Tuscan Salmon is a luscious dish featuring tender salmon fillets enveloped in a rich cream sauce, accented with sun-dried tomatoes and fresh basil. Perfect for any occasion!


Ingredients

  • 4 skinless salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for about 5 minutes until golden brown; flip and cook for another 4-5 minutes. Remove from the pan.
  2. In the same skillet, add minced garlic and sun-dried tomatoes; sauté until fragrant.
  3. Pour in heavy cream, stirring continuously, and let simmer for 3-4 minutes until slightly thickened.
  4. Mix in chopped basil, grated Parmesan, lemon juice, salt, and pepper.
  5. Return the salmon to the pan and spoon sauce over fillets for an additional minute before serving.
