- 1 bell pepper, diced
- 3 medium Yukon gold potatoes, sliced
- 1 cup shredded cheddar cheese
- 1 can (14.5 oz) diced tomatoes
- Salt, pepper, garlic powder, Italian seasoning to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, sauté onions in oil until translucent. Add bell peppers and cook until softened.
- Push vegetables aside and crumble in ground beef; cook until browned.
- Stir in canned tomatoes and seasonings; simmer for 5 minutes.
- In a greased baking dish, layer sliced potatoes at the bottom. Pour the meat mixture over the potatoes and top with shredded cheddar cheese.
