  • 1 bell pepper, diced
  • 3 medium Yukon gold potatoes, sliced
  • 1 cup shredded cheddar cheese
  • 1 can (14.5 oz) diced tomatoes
  • Salt, pepper, garlic powder, Italian seasoning to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté onions in oil until translucent. Add bell peppers and cook until softened.
  3. Push vegetables aside and crumble in ground beef; cook until browned.
  4. Stir in canned tomatoes and seasonings; simmer for 5 minutes.
  5. In a greased baking dish, layer sliced potatoes at the bottom. Pour the meat mixture over the potatoes and top with shredded cheddar cheese.
