  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, chopped nuts, seeds, dried fruits, and salt.
  3. In another bowl, mix honey (or maple syrup), melted coconut oil, and vanilla extract until well combined.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 20-25 minutes, stirring halfway through until golden brown.
  7. Allow cooling completely before transferring to an airtight container.
