- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth

Instructions
- Select the sauté function on your Instant Pot and heat olive oil. Add chopped onion and minced garlic; cook for 2-3 minutes until fragrant.
- Add chicken breasts, seasoning with salt and pepper. Sear each side for about 2-3 minutes until golden brown.
- Pour in the chicken broth followed by rinsed rice, ensuring even distribution.
- Close the lid securely with the valve set to sealing position. Select manual high pressure and set timer for 10 minutes.
- Once cooking is complete, allow natural pressure release for about 10 minutes before manually releasing any remaining pressure.
- Carefully fluff rice with a fork before serving warm.
