Description

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Select the sauté function on your Instant Pot and heat olive oil. Add chopped onion and minced garlic; cook for 2-3 minutes until fragrant.
  2. Add chicken breasts, seasoning with salt and pepper. Sear each side for about 2-3 minutes until golden brown.
  3. Pour in the chicken broth followed by rinsed rice, ensuring even distribution.
  4. Close the lid securely with the valve set to sealing position. Select manual high pressure and set timer for 10 minutes.
  5. Once cooking is complete, allow natural pressure release for about 10 minutes before manually releasing any remaining pressure.
  6. Carefully fluff rice with a fork before serving warm.
