Description

One Pot Sausage and Rice is a quick, flavorful dish that brings together savory sausage, vibrant bell peppers, and fluffy rice—all cooked in one pot for minimal cleanup. Perfect for busy weeknights!

Ingredients

Scale
  • 1 lb Italian sausage (sliced)
  • 1 cup long-grain white rice
  • 1 cup bell peppers (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups chicken broth
  • Olive oil (for sautéing)
  • Paprika
  • Thyme
  • Black pepper
  • Fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and brown until golden.
  2. Remove the sausage and add diced onions and bell peppers to the pot. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add uncooked rice, paprika, thyme, salt, and pepper. Mix well to combine.
  5. Pour in chicken broth while scraping any bits from the bottom. Bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender.
  7. Remove from heat, fluff with a fork, garnish with parsley if desired, and serve.
