  • 9 lasagna noodles (traditional or no-boil)
  • 15 oz ricotta cheese
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/4 cup fresh mint leaves, chopped
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick spray.
  2. Cook the lasagna noodles according to package instructions until al dente; drain and set aside on parchment paper.
  3. In a large bowl, combine ricotta cheese, eggs, chopped mint, salt, and pepper until smooth.
  4. Layer in the prepared baking dish: start with noodles, then half of the ricotta mixture and spinach. Repeat with remaining ingredients.
  5. Top with mozzarella and Parmesan cheese.
  6. Bake for 30-35 minutes until bubbly and golden brown. Allow to cool slightly before slicing.
