  • 1 cup long-grain white rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 2 green onions, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and bell peppers; sauté until softened.
  2. Stir in minced garlic and cook for about 30 seconds until fragrant.
  3. Push the vegetables to the side and add slices of Cajun sausage; brown on both sides.
  4. Add long-grain rice and Cajun seasoning; mix until rice is well coated.
  5. Gradually pour in chicken broth while stirring gently. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the rice absorbs the liquid.
  6. Fluff the rice with a fork and garnish with chopped green onions before serving hot.
