- 8 oz egg noodles
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded sharp cheddar cheese
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups frozen mixed vegetables
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Cook egg noodles according to package instructions until al dente; drain and set aside.
- In a large skillet, heat a splash of olive oil over medium heat. Sauté onions until translucent; add minced garlic and cook until fragrant.
- Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
- Stir in cream of mushroom soup and frozen mixed vegetables. Season with salt and pepper, then mix in cooked noodles.
- Transfer half the mixture to a greased baking dish, sprinkle with half the cheese, layer remaining mixture on top, and finish with remaining cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until bubbly and golden brown.
