Ingredients

  • 1 lb ground beef (80/20)
  • 8 oz egg noodles
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups frozen mixed vegetables
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Cook egg noodles according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat a splash of olive oil over medium heat. Sauté onions until translucent; add minced garlic and cook until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned.
  4. Stir in cream of mushroom soup and frozen mixed vegetables. Season with salt and pepper, then mix in cooked noodles.
  5. Transfer half the mixture to a greased baking dish, sprinkle with half the cheese, layer remaining mixture on top, and finish with remaining cheese.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until bubbly and golden brown.
