  • Cream cheese
  • Powdered sugar
  • Sour cream
  • Lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine eggs, vegetable oil, and vanilla; stir in grated carrots.
  4. Fold dry ingredients into wet mixture until just combined.
  5. In a separate bowl, beat softened cream cheese until smooth; gradually mix in powdered sugar.
  6. Add sour cream and lemon juice to the cream cheese mixture; blend until smooth.
  7. Pour half of the carrot cake batter into the prepared pan; spread cheesecake layer over it, followed by the remaining carrot cake batter.
  8. Bake for 35-40 minutes or until edges are golden and center is slightly jiggly.
  9. Cool completely before slicing into squares and enjoy!
