  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup apple cider (preferably fresh)
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a greased 9-inch springform pan and bake for 10 minutes. Let cool.
  2. In a large bowl, beat cream cheese until smooth. Gradually add sugar, apple cider, vanilla extract, cinnamon, nutmeg, and sour cream; mix until creamy.
  3. Add eggs one at a time, mixing gently after each addition. Pour the filling over the cooled crust.
  4. Bake for 50-60 minutes until slightly jiggly in the center. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.
  5. Chill in the refrigerator for at least four hours before serving. Drizzle with caramel sauce before slicing.
