- Garlic
- Cilantro
- Corn Tortillas
- Lime
- Beef Broth
- Cumin

Instructions
- Prepare Chiles: Remove stems and seeds from guajillo chiles. Toast in a dry skillet over medium heat for about 30 seconds until fragrant.
- Create Marinade: Blend toasted chiles with garlic, cumin, oregano, salt, pepper, and 1 cup of beef broth until smooth to form a paste.
- Marinate Meat: Rub half of the marinade onto the chuck roast. Let sit for at least 1 hour or overnight for better flavor.
- Sear Roast: In a large pot over medium-high heat, sear the marinated roast on all sides until browned (about 5 minutes per side).
- Add Broth & Simmer: Pour in remaining beef broth and chopped onion; bring to a gentle simmer. Cover and cook on low heat for about 3 hours until fork-tender.
- Shred Meat: Remove the roast from the pot, shred it with two forks, and return it to the pot with some liquid to keep it moist.
