  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400Β°F (200Β°C). Roast sweet potatoes on a baking sheet for 25-30 minutes until fork-tender.
  2. Mash the roasted sweet potatoes in a bowl, then combine with ricotta, nutmeg, salt, and pepper until smooth.
  3. Roll out fresh pasta sheets to about 1/16 inch thick. Cut into squares or rectangles.
  4. Place a spoonful of the filling in the center of each piece, fold diagonally to form triangles, sealing edges tightly.
  5. Boil salted water; cook caramelle until they float (about 3-4 minutes).
  6. In a pan, heat olive oil; add parmesan and a splash of cooking water to create a sauce that coats the caramelle.
