- 1 cup sharp cheddar cheese, shredded

- 1/2 cup heavy cream
- 2 large egg yolks

Instructions
- Peel and chop Yukon Gold potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them steam dry for about 5 minutes.
- Return potatoes to the pot and add butter, heavy cream, salt, pepper, and optional nutmeg. Mash until smooth but slightly chunky.
- Stir in shredded cheddar cheese until melted and well combined. Adjust seasoning if necessary.
- Fold in egg yolks one at a time until fully incorporated.
- Preheat oven to 425°F (220°C). Pipe or spoon potato mixture onto parchment-lined baking sheets into swirls or mounds.
- Bake for 20-25 minutes or until golden brown on top.
