  • 2 pounds Yukon Gold potatoes
  • 1 cup sharp cheddar cheese, shredded
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 2 large egg yolks
  • Salt to taste
  • Pepper to taste
  • Pinch of nutmeg (optional)

Instructions

  1. Peel and chop Yukon Gold potatoes into even chunks. Boil in salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and let them steam dry for about 5 minutes.
  3. Return potatoes to the pot and add butter, heavy cream, salt, pepper, and optional nutmeg. Mash until smooth but slightly chunky.
  4. Stir in shredded cheddar cheese until melted and well combined. Adjust seasoning if necessary.
  5. Fold in egg yolks one at a time until fully incorporated.
  6. Preheat oven to 425°F (220°C). Pipe or spoon potato mixture onto parchment-lined baking sheets into swirls or mounds.
  7. Bake for 20-25 minutes or until golden brown on top.
