  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 cups fresh spinach (optional)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken seasoned with salt and pepper, cooking until golden brown (7-10 minutes).
  3. Add sliced mushrooms and minced garlic to the skillet; sauté for about 5 minutes until mushrooms soften.
  4. Remove from heat and stir in heavy cream, Parmesan cheese, and Italian seasoning until smooth.
  5. In a baking dish, layer three noodles, half of the chicken mixture, and sauce. Repeat layers twice.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 15 minutes until golden brown.
