  • 2 tsp Salt
  • 2 tsp Black Pepper
  • 8 cloves Fresh Garlic, whole
  • 3 sprigs Fresh Rosemary
  • 3 sprigs Fresh Thyme
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry with paper towels; rub olive oil all over it.
  3. Generously season with salt and pepper.
  4. Place whole garlic cloves around the roast along with chopped rosemary and thyme.
  5. Place the roast on a rack in a roasting pan and roast for 20 minutes to develop a crust.
  6. Reduce the oven temperature to 325°F (163°C) without opening the door; continue roasting until medium-rare (about 15-20 minutes per pound).
  7. Once cooked, let the prime rib rest for at least 20 minutes before slicing against the grain.
