  • 1 lb shrimp, peeled and deveined
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon

  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté minced garlic for about 30 seconds before adding shrimp. Cook until pink and opaque.
  3. Lower heat and pour in heavy cream; stir in lemon juice and zest. Simmer for about 3 minutes until slightly thickened.
  4. Mix in grated Parmesan cheese, stirring until melted. Season with salt and pepper.
  5. Add drained fettuccine to the skillet, tossing everything together. If too thick, add reserved pasta water for desired consistency.
  6. Garnish with chopped parsley before serving hot.
