  • 1 lb lean ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 medium Yukon Gold potatoes, cubed
  • 4 cups low-sodium beef broth
  • 1 Β½ cups shredded sharp cheddar cheese
  • 1 cup milk or heavy cream
  • 2 tbsp Worcestershire sauce
  • 1 tsp mustard powder
  • Salt & pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until no longer pink; drain excess fat.
  2. Add diced onions and minced garlic to the skillet; sautΓ© until onions are translucent.
  3. Transfer the beef mixture to a crockpot; add cubed potatoes, carrots, beef broth, Worcestershire sauce, mustard powder, salt, and pepper. Stir well.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in shredded cheddar cheese and milk or heavy cream until melted.
  6. Serve hot garnished with fresh parsley alongside crusty bread.
