  • 1 lb chuck roast
  • 8 oz tortilla chips
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup diced onions (red or white)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 1 avocado, sliced or 1/2 cup guacamole
  • 1/4 cup pickled jalapeños

Instructions

  1. Season the chuck roast with salt, pepper, cumin, and paprika. Brown in a pot over medium heat until golden.
