Instructions

  3. In another bowl, beat the eggs until frothy. Mix in grated carrots and vanilla extract until well incorporated.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula to maintain an airy texture.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for 15–20 minutes or until golden brown and springy to touch.
  6. While cooling slightly, whip cream cheese with powdered sugar and remaining vanilla until smooth. Spread evenly on cooled cake, then carefully roll it up from one end using a clean kitchen towel dusted with powdered sugar.
