  • ¾ cup fresh lime juice (about 46 limes)
  • Zest of 2 limes
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into an 8×8 inch baking pan.
  3. Bake crust for 8-10 minutes until golden. Let cool slightly.
  4. In another bowl, whisk together lime juice, lime zest, sweetened condensed milk, and eggs until smooth.
  5. Pour filling over cooled crust and bake for an additional 15-20 minutes until set but still jiggly in the center.
  6. Let cool completely before refrigerating for at least two hours. Cut into squares and serve chilled.
