  • 4 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 tbsp unsalted butter
  • 2 cups mashed potatoes (prepared)

  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch broccoli in boiling salted water for about 3 minutes; drain and set aside.
  3. Heat olive oil in a skillet over medium-high heat. Season salmon with salt and pepper, then sear skin-side down for 4-5 minutes until golden.
  4. In a saucepan, melt butter on low heat; add minced garlic and cook for 1 minute, then stir in lemon juice.
  5. Boil peeled potatoes in salted water until fork-tender (15-20 minutes), drain, mash with butter and milk, then season.
  6. Plate mashed potatoes and broccoli; top with seared salmon drizzled with garlic lemon butter sauce.
