  • 1 cup green or brown lentils
  • 1 cup rolled oats
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 bell pepper, chopped
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons soy sauce or tamari
  • ½ cup chopped walnuts or pumpkin seeds (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat a splash of olive oil over medium heat. Sauté diced onion and grated carrot for about 5-7 minutes until softened.
  3. Add minced garlic and chopped bell pepper; cook for another 3-4 minutes until fragrant.
  4. In a separate pot, combine rinsed lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender.
  5. Drain excess liquid from lentils and mix them with sautéed vegetables, rolled oats, soy sauce, spices, and nuts/seeds if using in a large bowl.
  6. Transfer the mixture into a lined loaf pan, pressing down firmly to shape it into a loaf.
  7. Bake for 45-50 minutes until golden brown on top. Let cool slightly before slicing.
