  • 9 lasagna noodles (no-boil)
  • 2 cups fresh spinach
  • 1 cup button or cremini mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • ½ onion, chopped
  • 2 tsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, warm olive oil and sauté chopped onions until translucent. Add minced garlic and sliced mushrooms; cook until golden brown.
  3. Stir in fresh spinach until wilted. Remove from heat and mix with ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper until creamy.
  4. Spread marinara sauce on the bottom of a baking dish. Spoon filling onto each lasagna noodle and roll tightly.
  5. Place rolled noodles seam-side down in the dish, cover with remaining marinara sauce and sprinkle extra mozzarella on top.
  6. Cover with foil and bake for 25 minutes; then remove foil and bake an additional 15 minutes until bubbly.
