Ingredients
- 9 lasagna noodles (no-boil)
- 2 cups fresh spinach
- 1 cup button or cremini mushrooms, sliced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cloves garlic, minced
- ½ onion, chopped
- 2 tsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, warm olive oil and sauté chopped onions until translucent. Add minced garlic and sliced mushrooms; cook until golden brown.
- Stir in fresh spinach until wilted. Remove from heat and mix with ricotta, mozzarella, Parmesan, Italian seasoning, salt, and pepper until creamy.
- Spread marinara sauce on the bottom of a baking dish. Spoon filling onto each lasagna noodle and roll tightly.
- Place rolled noodles seam-side down in the dish, cover with remaining marinara sauce and sprinkle extra mozzarella on top.
- Cover with foil and bake for 25 minutes; then remove foil and bake an additional 15 minutes until bubbly.
