  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz softened cream cheese
  • ½ cup sour cream
  • 1 cup fresh raspberries
  • 2 tsp vanilla extract
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press mixture into the bottom of the baking dish and bake for 10 minutes until golden.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, followed by sour cream and vanilla extract; mix well.
  4. Add eggs one at a time, mixing gently to keep the batter airy. Fold in fresh raspberries carefully.
  5. Pour filling over baked crust and smooth with a spatula. Bake for 30-35 minutes until edges are set but center jiggles slightly.
  6. Let cool completely before refrigerating for at least two hours. Cut into squares and serve chilled.
