Ingredients

  • 2 ripe mangos (about 400g cubed)
  • 1 cup full-fat coconut milk
  • 2 tbsp honey or maple syrup
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Peel and cube the ripe mangos, ensuring no fibrous bits remain.
  2. In a blender, combine the cubed mangos, coconut milk, honey or maple syrup, and lime juice. Blend until smooth.
  3. Pour the mango mixture into ice cream molds, filling each nearly to the top.
  4. Insert sticks into each mold and freeze for 4-6 hours until solid.
  5. To unmold, run warm water over the outside of each mold and gently release.
