  • 1 can (400ml) full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 2 cups low-sodium vegetable broth
  • 1 can (400g) chickpeas, drained and rinsed
  • 2 cups fresh spinach or kale
  • Juice of 1 lime

Instructions

  1. Preheat a large pot over medium heat and add a splash of oil.
  2. Sauté chopped onion until golden brown (5 minutes). Add minced garlic and ginger; cook until fragrant.
  3. Stir in diced sweet potatoes and yellow curry powder, cooking for another 2-3 minutes.
  4. Pour in coconut milk and vegetable broth; bring to a gentle simmer. Cook until sweet potatoes are tender (15-20 minutes).
  5. Add chickpeas and greens; cook until wilted (about 5 minutes).
  6. Remove from heat and drizzle with lime juice before serving.
