  • 3 tbsp Chives or Green Onions, chopped
  • 1 cup Shredded Cheddar or Monterey Jack Cheese
  • ½ cup Crispy Bacon Bits (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash and dry the russet potatoes thoroughly.
  2. Bake potatoes directly on the oven rack or on a foil-lined baking sheet for 45-60 minutes until fork-tender.
  3. While potatoes bake, heat olive oil in a skillet over medium-high heat. Season steak pieces with salt and pepper and cook for 3-4 minutes until browned but juicy.
  4. Let steak rest while preparing toppings: chop chives and grate cheese.
  5. Once baked potatoes are cool enough to handle, slice them open lengthwise, fluffing the insides with a fork. Add sour cream, followed by steak bites, cheese, bacon bits (if using), and finish with chives.
